Introduction: Juglans regia (the Common walnut, Persian walnut, or English walnut), is the original walnut tree of the Old World. It is native in a region stretching from the Balkans eastward to the Himalayas and southwest China. The largest forests are in Kyrgyzstan, where trees occur in extensive, nearly pure walnut forests at 1,000–2,000 m altitude (Hemery 1998)—notably at Arslanbob in Jalal-Abad Province. Juglans regia is a large deciduous tree attaining heights of 25–35 m, and a trunk up to 2 m diameter, commonly with a short trunk and broad crown, though taller and narrower in dense forest competition. Walnut Chocolate Chip Cookies

Walnut Chocolate Chip Cookies 1/2 c butter 1/2 c dark brown sugar (packed) 1/2 c granulated sugar 1 egg 1/2 t vanilla extract 1 c flour 1/4 c cocoa 2 T instant coffee powder 1/2 t salt 1/2 t baking soda 1-1/2 c (9oz) chocolate chips 1/2-1 c coarsely chopped walnuts. Preheat oven to 350F, rack in centre position. Cream butter, add sugars; beat. Add eggs and vanilla. Beat. Sift together dry ingredients; add to creamed mixture. Blend well. Stir in chocolate chips and walnuts. Drop rounded teaspoonfuls 3" apart on greased cookie sheet. Flatten mounds slightly. Bake 10-12 minutes. Cool 5 minutes. Remove to racks to cool completely. (Makes 3 dozen)

Organic Walnut Chocolate Chews

1 cup chopped walnuts 1 cup slivered almonds 1/2 cup liquid honey 2 tablespoons strong black coffee Sweet cocoa to taste Place walnuts and almonds in small bowl and toss together. Transfer to food processor and blend several minutes. Replace nuts in small bowl and add honey, mix together. Transfer nuts back to food processor and add coffee, blend about 1 minute. Spread mixture on large plate and cover with sheet waxed paper, pressed against surface. Refrigerate 2-3 hours. Remove and shape into small balls with hands. Roll in cocoa and continue to chill another hour before serving.
